I have a very happy hubby. Since being on a wheat free diet he has been unable to have one of his favourite treats, caramel shortbread or as we call it millionaires shortbread. Even the shop bought variety has a crumbly base that just falls apart as you eat it. So, having successfully made shortbread that does not disintegrate when handled, I used the caramel from my usual recipe and topped it with melted chocolate. The result – Fantastic even if I say so myself. It must be good as it seemed to disappear very quickly and trust me, it would hang around if it wasn’t.
